I can’t quite fully explain how much I love Peanut noodles. When Kath posted a recipe for veggie peanut noodles, I immediately bookmarked it with plans to make it.
Well, last night was the night.
I used red pepper, snow peas and broccoli as the veggies. I did use peanut butter instead of sunflower butter, as Kath did. Christopher went back for seconds and was really surprised when I pointed out that it was vegan. Haha.
Thank you, Kath! I’m totally going to make this in bulk next week. I have a feeling these would be delicious cold…maybe with some carrots, scallions and napa cabbage?
